Annie's Salad Dressing

I found the BEST salad dressing. No Joke, the BEST! It was sitting on the shelf at Sprouts just waiting for Travis and I. Yum!

It is a blend of Tahini and Sun Dried Tomoatoes. I've been slacking on eating salads recently because I was tired of all of my dressings. Guess that will be changing!

Southwestern Chicken Skillet

This is an old post, but a goodie. Makes me want this for dinner tonight! 

 

Circa December 2010:

 

Soooo, many of my friends have been blogging about their adventures in the kitchen.  With the success of dinner tonight I must share!  Since Travis just finished finals, he has a lot of time on his hands.  During the day he usually sleeps, plays video games, and now COOKS!  Yes girls, my man cooks, and he's awesome at it.  Tonight I helped him make a recipe from the back of the rice box.  Here is the formal recipe
Southwestern Chicken Skillet
-4 small boneless chicken breast (approx. 1 lb)
-2.5 cups water
-1 cup salsa, thick 'n chunky
-10oz (we used 2 cups) of frozen corn
-2.5 cups MINUTE Brown Rice
-Pre-shredded Cheese
-2 squash (we added this because we had some that needed to get used up)

1. We cubed the chicken and cooked it in a skillet until cooked through.  While cooking we seasoned with chile powder, garlic powder, and season salt (the must have ingredient for anything Travis makes.  It may be unhealthy but he likes it.)
2. In a separate skillet we grilled the squash (also seasoned: chile powder, paprika, onion powder, garlic powder, and season salt)
3. Once the squash was grilled we removed it and added the water, salsa, and corn.  Heat to boiling and then add the rice.
4. Cover the rice and reduce hit and let simmer for 5 minutes.
5. Add the chicken, the squash, and some shredded cheese.  Continue to cook covered for 5 minutes.

This dish was so delicious!  I wasn't expecting it from the back of the rice box, but man oh man.  I'm really excited for leftovers tomorrow!  Unfortunately there are no pictures of the process or the finished product.  We ate too fast to take pictures. We had Quinn and Erica over to eat and celebrate Travis finishing the semester.  Afterward we played Agricola, a long but very fun board game.  A wonderful evening with wonderful friends.

What's with the Name?

Names are important. As a child, they give you your first inkling of an identity.  Getting a new name is more of a painful experience. So many lines. So much hold music. However, my blog's new name was painless. That's just one of the reasons why I love it so much!

 The Green Medley

I always loved my maiden name, Medley. It was unique, but easy to pronounce. It has a rich history, traceable back to my Great, Great, Great... Grandpa who fought in the American Revolution. So this is a way to keep that name alive. Now, Green, it's my favorite color. It represent so many fresh and beautiful things, and it gives you a clue that I'm new to this whole blogging thing. Green reminds me of mountains,

Why Deer and Cars Don't Mix

I have had the same car since I was 16, a Honda Civic. I love it, and over the weekend a deer decided to run in front of me while I was going 55mph.

Not so awesome:
It could have been SO Much worse. Thank the lord it only hit the front of the car and didn't go through the windshield, but guys, it was terrifying! Now my husband and I will figure out the whole carpooling thing.

Christmas Music

I love Christmas, and what makes Christmas the most Christmas-y, the Music! I like all kinds of it, obviously:
I found my Christmas CDs this evening. I'll pretend like this is all of it, but to be honest, it's not. I have SO much more on my computer.

You can see that I have 2 copies of Amy Grant's Christmas album. Which is the best! When I was in high school I won tickets on the radio to the  Amy Grant/Vince Gill Christmas Concert. It was an amazing mother daughter moment, and since then I've been sort of hooked. Check it out on Amazon.com (my favorite place to by MP3s). Do you have a favorite Christmas Song/Album? Should I add it to my collection?
